blueberry pancakes with blueberry chia sauce. perfect.
these delish AND healthy cakes only took me about 10 minutes to whip up and make! It was the perfect wholesome breakie before I was off at 7:30am to meet some crazy early-riser friends for a study sesh before my healthsci exam! This is the first time I've made them and they turned out great. I even had time to make the sauce - double the yum! I LOVE pancakes as it is. And waffles and crepes and....and. Anywhos, since finding a new love for healthier, more wholesome food choices, I've been searching for a good pancake. (one that doesn't taste like butter, is cakey in texture, and doesn't make you feel like a lump a sludge afterwards!) inspired by Lee! I love this recipe because it makes the perfect amount for one person and you can mix any fruit in it! (I think I'm gonna try using banana tomorrow and make the sauce with a mango i've got stashed in my fruit bowl pleading to be devoured..mm) Like I said...healthy, easy, yummy! (enough with the exclamation marks, yes?)
pancakes (makes 4 minis or 2 regular)
-1/4C oat bran
-2 T spelt flour
-2 dashes of cinnamon
-pinch of salt
-1/2t baking soda
-1 large egg white
-1/4C blueberries
-1/4C almond milk

blueberry chia sauce
-1/4C blueberries (fresh or frozen!)
-1/2T chia seeds
-1T water
-1/2T chia seeds
-1T water
(In a small sauce pan, heat all ingredients together on low-medium heat. Stir your sauce frequently so it doesn't burn to the pan. I cooked mine for about 3ish minutes. Before serving, I let it sit in a small bowl for an additional 3-5 minutes to further thicken)

Ok..so what about this JOY?
Well.. here it is. This morning I woke up with an unexplainable surge of joy and peace about today and this coming week. You know those moments when you're still half-asleep, but half-awake, just basking in the precious seconds before your brain fully turns on and your eyelids had to open? It was like that. I left my window open when I hardly ever do, and this little breeze was coming in and I just thanked my Lord for another day of life and he brought this verse to my mind - Isaiah 40;
The LORD is the everlasting God,
the Creator of the ends of the earth.
He will not grow tired or weary,
and his understanding no one can fathom.
29 He gives strength to the weary
and increases the power of the weak.
30 Even youths grow tired and weary,
and young men stumble and fall;
31 but those who hope in the LORD
will renew their strength.
They will soar on wings like eagles;
they will run and not grow weary,
they will walk and not be faint.

With so many things on my plate lately like moving, interviews, jobs, EXAMS, travel planning, running stuff, family/friend jazz, it feels good to know I'm not doing this on my own. The joy and strength of God is my life source every day and its the most amazing thing to be personally reminded of that by Jesus when I first wake up :)
