nom nom nom

So much to say so little time! This was supposed to be a big long post about some pretty great things, buuut like always, time plays by its own rules and here I am 10:30, pooped, and needing to study! I finally did the straight 10k today! I wasn't sure about doing it after working for 10 hrs..but i managed to muster up some motivation and do it! It started out rainy and cold and ended pouring which was so nice. It took me 53 minutes WITH having to stop at a ton of stoplights there and back while i ran on the spot, so I'm thinking it would have been more like 50 minutes.. and that was also without pushing myself at the end.. I'm hoping I can do it in 45 min next weekend for the Sun Run..which I talked my Dad into doing with me! Yeaa baby! Anywho, what better to do then ice the shin up and cook some good bites? Here's a recipe i've been wanting to try for awhile! Lee from Fit Foodie Finds has been inspiring me lately and this one in particular  was really easy and pretty fast to make..the chicken just takes about 35 min to bake in the oven.

My version:
Green Burrito: (vegetarian or not)
collard leaf
curried hummus (amaaaazing! just made simple hummus & added curry powder)
lentil meat (I used chicken)
fresh vegetables - orange pepper, spinach, sprouts, red cabbage
sunflower seeds
hot sauce
served with salsa and fresh guac.

Chicken:
2 small thawed chicken breasts
1T basil pesto
3 wedges of lemon
splash of white wine

Guacomole:
1 avocado
tomatoe
1/4 chopped onion
pinch of salt & pep
handful of cilantro
1/2 squeezed lime
